When Food & Wine Magazine inducted Chef Niven Patel into their Best New Chefs Class of 2020, they wrote “there is farm-to-table, and then there is Niven Patel’s farm to table.” It is the passion and respect for ingredients that he grows himself, and those he sources from local farmers, that serve as the cornerstone of his cooking philosophy.
This guiding principle is present in the menu at the nationally acclaimed Ghee, which he opened in 2016 and Mamey which he unveiled inside THesis Hotel in 2020. With the opening of Orno, Chef Niven brings together an impressive seasonal menu that boasts innovative dishes with bold flavors.

At Orno, our focus is fresh, quality ingredients, many of which come directly from Chef Niven’s own farm, Rancho Patel. The two-acre farm located in Homestead, FL grows over 35 varieties of fruits and vegetables which supply his restaurants.
As a member of the farming community, Chef Niven is able to procure some of the finest and freshest ingredients available. A respect for the cultivation of each ingredient is at the root of the Orno experience.
